I’m actually using the Hahnemühle Fine Art Baryta and Piezo Pro inks but I don’t find the black as black as Piezo K7.
I actually get 100% black at L 6.82, could it be better ?

Pro ink and FA Baryta in particular was not a spectacular dMax if I recall but in our testing here we were at L*4-ish. This varies form paper to paper and printer to printer. You could increase the ink amount a bit though.

I found the ink limiting part in the Excel files but is there any way to “test” the ink limit of the paper without guessing the % to add in the black tab ?

There is not magical test. Make two curves (one normal one very high) and use the blending in QuadtoneRIP to quickly test different increments.
